Colin, delta wings designs do not need wing geometry modification for low-speed lift as often as do conventional designs. This one, with the canards giving a pilot good pitch control at landing speed, just uses that huge triangle wing area for additional low-speed lift. What you are seeing here is near a textbook Eurofighter landing. The canards are cycling from a negative angle on the final approach nearly straight into the relative wind for maximum pitch authority, to a positive angle here at touchdown and maintained as needed to put the nose wheel down. They then bring it to full negative while taxing.
